Instead of usual contenders, USA TODAY sought places that should top your 2024 dining bucket list. Indeed, these places have stories to tell, heart and soul, and of course, delectable dishes that will leave you with an unforgettable and lasting impression.
Doro Bet, the only place in the city of Philadelphia to make the list, was recognized as a restaurant of the year.
What’s So Special About This Restaurant?
The menu is full of flavorful dishes, however, their magic weapon is undoubtedly, the Ethiopian fried chicken.
Doro Bet’s co-owner, Chef Mebruka Kane is credited with creating the original spin on a classic dish. A spin so tasty foodies travel from all over to record a taste, and now, USA TODAY has joined the wave.
There’s a secret to Kane’s recipe beginning with Ethiopian teff flour traditionally used for spongy and springy injera bread. Next, Kane added tapioca flour for the signature crisp and crackle you taste with each bite. Lastly, chickpea flour is added to bind it all together.
But wait- there’s more!
Before the chicken is breaded and fried, the spicy (awaze) fried chicken is marinated in buttermilk and berbere spice. While we absolutely love the taste, we may never know exactly how to recreate it. The berbere spice is made from a secret recipe from Ethiopia.
Not to mention the chicken is both Halal and gluten-free.
