After five consecutive years of selling out its beloved Feast of the Seven Pickles, Fishtown Pickle Project is bringing its signature flavors to summer for the very first time. On Thursday, Aug. 27, the Philadelphia favorite is partnering with Uchi in Rittenhouse for a one-night-only culinary collaboration featuring a nine-course pickle-inspired tasting menu that puts fermented flavors front and center.
Created by Fishtown Pickle Project founders Niki Toscani and Mike Sicinski, the late-summer feast marks the brand’s first pickle-centric dinner outside of it annual holiday tradition. This time, the duo is teaming up with Chef Tyson Cole’s acclaimed Japanese restaurant to create an inventive menu where every course features a unique pickle component.

Rather than serving pickles as a side, each dish incorporates them in unexpected ways.
The collaborative menu includes everything from raw oysters with giardiniera, mapo oil, and fennel pollen to hamachi crude with pickled peach and ginger lemon pickle ponzu, house pastrami nigiri with dill pickle relish, and mi-cuit salmon with pickled enoki mushrooms. Even dessert embraces the theme with a playful combination of pickle jam, popcorn mousse, and blueberry sorbet.
