One of Philadelphia’s nationally recognized bars, Post Haste, begins a new chapter with a shift toward a more food-driven identity. Now guided by chef Ari Miller in partnership with owner Fred Beebe, the concept is evolving into a restaurant where the kitchen takes the lead.

Miller known for his work at Musi, brings an ingredient-focused approach. His return to Philadelphia marks a shift in how the restaurant operates, placing food at the center of the experience.
The approach is grounding in sourcing with intention. Local farms, regional producers, and small suppliers shop both the kitchen and bar. Ingredients are used across multiple applications, reducing waste while maintaining a clear sense of seasonality.

The restaurant structures the menu to support different types of dining, from small plates to full meals.
Highlights include:
- 🥨 Soft pretzel served with cheese or caviar
- 🍲 Hawaiian kanpachi poke bowl
- 🍽️ Scallops with green vichyssoise
- 🦆 Silk chili bow ties with duck bolognese

The Billion Layer Lasagna stands out as a signature dish. Built using elements from across the kitchen, the dish reflects the restaurant’s broader approach to using ingredients fully.

A unified kitchen and bar 🍹
The bar program continues to develop alongside the kitchen. Cocktails are created using regional ingredients and incorporate byproducts from food preparation, reinforcing a shared system between both sides of the operation.
This includes the use of espresso grounds, citrus pulp, and house-made elements that extend the life of ingredients while adding depth to the drinks.

Dining beyond dinner ✨
The restaurant offers several ways to visit, including happy hour from Wednesday through Saturday, a late-night bar menu, and pay-what-you-can Sundays for food.
A redesigned dining room introduces a more intimate layout, along with a rotating art program featuring Philadelphia artists.
With these changes, Post Haste moves forward with a clearer identity, bringing its kitchen and bar into alignment through sourcing, technique, and a consistent point of view.
